Chinon Cuisine de ma Mere

La Cuisine de ma Mère is an organic light and fruity red with tasting notes of raspberry jam and with smooth tannins. This is one of my personal favourites, made by two brothers Nicolas and Sylvain at Domaine Grosbois. Nicolas strongly believes in not vinifying and aging in wood, choosing concrete instead to preserve the freshness and vitality. Both brothers are passionate about organic viticulture and the Cuisine de ma mère comes from their young vines from clay and sand and is made for early drinking. The grapes are destemmed and undergo a 5-day skin maceration, fermented in concrete and then aged in concrete.
